The Vault Restaurant Unlocks 1920s Style

The Vault, one of South Florida's most anticipated restaurant openings, recently debuted in Pompano Beach, bringing to life the colorful history of its location—a former bank targeted by the notorious Ashley Gang, one of Florida's most famous outlaw groups. This exciting new establishment adds to the revitalization of the city's Old Town district, much like the historic renovation of the Bailey Hotel into Bailey Contemporary Arts.

Owner and operator Jessica Spillman spearheaded the vision for The Vault, transforming the historic space into a vibrant dining experience. Her vision impressed the Community Redevelopment Agency (CRA), who supported the project through two key programs. A $40,000 Façade and Business Site Improvement grant funded exterior enhancements, including windows, doors, and the construction of the outdoor deck, pergola, and biergarten counter. An additional $97,000 from the Strategic Investment Program supported critical infrastructure upgrades such as electrical, plumbing, and HVAC systems.

"The CRA recognized Jessica's vision for the space and was committed to supporting the redevelopment of this landmark property, blending modern design with a significant nod to its past," said Nguyen Tran, CRA Director. “We're extremely proud of these CRA programs, which foster strong partnerships and drive economic development in our city."

Early guests have raved about The Vault's ambiance, which incorporates the original bank vault, murals depicting the Ashley Gang, and a vibrant Roaring 20s theme. The contemporary menu features dishes and drinks with playful nods to the past, including the Bootlegger Mac & Cheese, Lettuce Lake Cobb Salad, King of the Glades Sandwich, Outlaw Chicken Bowl, Flapper Fizz, and Bees Knees.
